Monday Prep

I decided to do some food prep. I want to see if this makes it easier for meal times and to lose weight. Everything is low carb and grain free.I made egg muffins for Breakfast. Some lunches for Gregg to take to work. Rice, with veggies and some meats. Trying mason jar salads. Plus some extra meats for whatever.

 


I had planned to just make some spicy beef to add to other recipes, but as I went along things sort of ended up in the pot. Now its beef, veggies, coconut tomato soup.

 

Also used up some hot dog wieners and made fathead sausage rolls.

 

In the end, it was like nothing ever happened in the kitchen.

 

 

LC Cinnamon Donut Holes

Finally got to making some Donut holes. I searched and found a few but not what I was looking for. So this is what I came up with.

Ingredients

  • 2 cups almond flour
  • 1/2 cup butter
  • 1/2 cup sweetener
  • 1 tsp vanilla extract
  • 2 tsp cinnamon

Preheat your Pops Maker or preheat the oven to 300c. Mix up all the ingredients. Make 14 balls, place in Pops maker or on a baking sheet. If you’re doing them in the oven, you might want to flatten them a bit. Bake for 15 mins or until golden brown. I rolled them in some cinnamon and splenda.

I think next time I will try it with pumpkin spice.

LC Tilapia Balls

I recently bought a used Babycakes Cupcake Maker and a Pops Maker. Both are like new. A well  spent 9.00.

The last few days I have been on the hunt for Low Carb recipes that I can make in them. Well, I found one that I tried last night and it was very good. Here is the link to the recipe I found –> Clicky here

Ingredients

  • 2 tilapia fillets OR other mild white fish
  • 2 eggs
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup almond meal
  • 1/2 tsp baking powder
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • and whatever spices you want.

I baked the fish, let it cool. Then into a bowl pulled apart. Mix in the rest and then make some small balls and into the pops maker. It takes about 8-10 mins of cooking time to get them golden and crispy. Made some coleslaw and just used whatever I could find for dipping sauce, Dijon mustard, BBQ and salsa ranch dressing.

Hubby and I are not big on fish, but these fish balls were tasty.

 

LC-Cheese Taquitoes

Tonight’s dinner was another tasty treat. I didn’t feel like doing a big meal or standing for a long time in the kitchen. I looked in my fridge and noticed that there wasnt much in there. That means  you got do what you can with what you have. Next time I am going to try a different cheese.

Ingredients:

  • Round Provolone cheese
  • Ground beef
  • Mexican spices or whatever you like

Pre heat oven to 375c

Cook up your meat and set it aside. Take your cheese and slice thinly. Put parchment paper on a cookie sheet, Spray a bit of pam on the paper. Place your cheese far enough from each other so they don’t melt together. Pop into oven for about 8-10 mins. Remove from oven and spoon out the beef on each slice then roll up the cheese. Put them on a plate with some salsa and guacamole. I also made a big salad. That’s it! Enjoy!

LC Pepper Poppers

These were so good I will be making them again. I don’t like Jalapenos so I used regular peppers.

So easy to make. Took about 15 to mix up and 25 mins to bake.

Ingredients:

  • 4 large peppers ( I used yellow and red)
  • 8 oz softened cream cheese
  • 6-8 pieces of crisp bacon or 2 tbs real bacon bits
  • 2tbs Green onions or regular onions
  • Spices- Up to you on this. I used some smoked chipolte, roasted red pepper with garlic
  • 1 cup shredded cheese ( I used jalapeno Jack)
  • Parmesan

Clean and cut your peppers. Put them on parchment paper covered cookie sheet. Mix up all the ingredients. Put into the peppers. Sprinkle with Parmesan and a few extra pieces of bacon. Into the over at 375c for 20 minutes then watch it until the tops are golden. Remove from oven and eat. YUM!

Vegan Christmas!

Alright, I want to clear this up. I don’t eat wheat. Actually I try to stay away from all grains. This has nothing to do with gluten-free. I will eat gluten. I just don’t eat grains. I have been tested by a real allergists (not by a friend of a friend that thinks I should eat gluten-free because my tummy hurt from eating too many christmas cookies) and the results said that I am allergic to wheat. All types of wheat as I have discovered over the last few years.

There is a big difference between wheat free and gluten-free. Any type of “wheat” causes pain for me. What type of pain?.Well think of being doubled over with breath taking pain that makes you scared to take a breath. The pain of gas building up and trying to move its way through your intestines. Getting all sweaty and dizzy. Wishing you could die instead of having to go through it.Yeah I think you get what I am saying. Then top it off with Montezuma’s revenge. Nice way to spend the day. But wait! There’s more! You get another day of dull tender aches in the intestinal areas of your body. Yes it’s just so much fun! Not.,

I instead use nut flours. I can’t eat the “gluten-free bake mixes” There are grains in them. Spelt, millet, sprouted wheat, ancient grains. Doesnt matter, they all hurt. I can’t even do bean flours, which you do find in many of the gluten-free mixes. I also don’t eat rice flour or potato. I could, but it’s my choice to leave them out since I eat Low Carb.

What does this all have to do with a Vegan Christmas? My oldest boy Matt, and his wife are now vegans. Have been for over a year. Why they decided on this, I’m not really sure. Any ways, I am having over for dinner on Christmas Eve. I had to find something they would eat. Well let me tell you, it wasnt easy to find food they could eat. Sure it sounds simple but it’s not. I searched across the vast land of Google to find something tasty to make for them but also something we could eat. Simple, veggies! LOL, not really!

A vegan doesn’t eat any type of animal product. Not able to use any dairy, eggs, and such really made it a challenge for me. Since we eat a lot of butter, cream, cheeses cause of our low carb diet. Which includes meat. After many texts messages with Matt I have finally figured out what to make for dinner. I just hope it will be tasty. Definitely not the traditional Christmas dinner!

So now I am curious what is the difference between vegan and vegetarian?   I will need to travel across the land of Google to find my answers.

Low Carb Eating

Well, today Gregg and I are starting a low carb eating plan. I dont really want to say diet since this will not be just for weight loss.I realize that I cant eat most wheat based foods and eating low carb will become more of a live style for me. So I am taking Gregg along with me for the ride…lol. There will be some major changes to the way we eat. Especially at family functions. No more baked goodies. No breads, some fruit but mostly just berries. Low carb is more about vegies and meat.

We tried the Atkins diet many years ago and it did work, but this time I am going to go more of atkins/south beach style. I am doomed to fail is I have only 20 carbs a day. This week it will still be a bit higher since there are some foods that need to be eaten first. There is no way I am throwing out food.

Eating low carb will also make me feel better by leaving out my allergy foods. Which is mainly starches and grains. No wheat, corn, potatoes or rice. As for fruit, well I already know that apples, bananas and oranges dont agree with me. I do have a weakness for summer fruits like watermelon and berries, but I can eat those on CL since they are lower in carbs. I dont have a problem eating my greens, I love vegies. Meat, easy, love meat too.

I’m sure Gregg and I will adjust to this way of eating over the next few weeks. I know my starting weight isnt that high, but Gregg has gained some back again. Not sure how much and if he would want me to post it here. I have kept most of my weight off that I lost a few years ago. Tho I had started out at 175lbs I am now at 152. I want to be around 135 if I can, but 140 is fine too. It would be great to see Gregg at 200lbs, but I think it will take some time to get him there.

With the nice weather starting, we will be going for walks in the evenings and I have many Wii games for us to play. Latest addition is Zumba and Just Dance 2. I plan to try them out this afternoon. As long as my back is feeling up for it.

I will try to do a weekly update. Maybe even start a new page to post LC recipes and post our weekly weigh in. Might help keep us on track better.

Milling Rice

As you know I am on a wheat free diet. I’ve been looking for other types of flour that taste good and easy to bake with. Well, Mom gave me her milling machine a few years ago and I finally found a reason to use it! I milled some rice. Yup! I did and its just like regular flour. So many websites tell you to wet the rice and put it in a blender. I thought that sounded a bit odd. I researched as much as I could and every where I looked it was wet rice. Hmmmm! I called mom.

Mom explained that water is NOT needed. So I milled the rice. it was very loud and it took about 45 minutes to grind down 2 pounds of Brown rice.

Now I needed to find a recipe! I had a couple ripe bananas to use up so banana bread it is! Well, muffins.

MMMMMM! So tasty! Even Gregg said that they are good! Tomorrow I see if I can make rice bread!

Its My Birthday….again

Seems I just had one last year…lol. Wow…42 years old. I cant believe it. Ya know, I’m ok with my age. Sure I’m in my 40’s. Big deal. Soon it will be the 50’s. I just hope I still look young…lol. I think I was lucky and got the young gene in the family. I’m still a hot looking woman…hehe Well at least Gregg says i am and I trust his judgement.

So what am I doing on my special day? Gregg and I are going to have our morning coffee as usual, and then get ready to go over to Mom’s. Pick her up and head to the border. We are going to stop off at Wal-mart and meet up with Mom’s sister Susi for a coffee. After wards we will get back on the road and drive down to Bellis Fair Mall where I will be buying my present. I have been needing new runners and I have decided that I want the Skechers Shape-ups. I hope they help with my back pain and my sore heels when I walk. I sure want to be able to go out walking and not have to stop after 15 minutes from the pain. Its so frustrating to try and get in shape and not have good shoes.

I also need jeans. Since I finally am at my goal weight I need some jeans that I dont have to keep pulling up or have to wear a belt. Plus I dont want stretchy jeans. I cant find any that are normal jeans around here unless they are flared, low riders and cost way too much and I dont do the skinny jean, I just dont like them. I like a boot cut or straight leg and long. At least a 34 inseam. Most are 32 and that is too short for me. But why do jeans have to have lycra in them? I want regular old school jeans…lol

Well maybe I’ll find them at the Mall. After the shopping is done we are going to take mom for some real Mexican food. Gregg and I have both been craving Tacos el Pastor. I want Mom to try them too. I think she will enjoy them.

Well, going to go start dinner. Its House and heroes tonight.
