The End is Near!

Another year gone. Wow, hard to believe how fast time goes by. Seems the older I get the fast time goes. This past year went by so fast, I didn’t get anything done. At least that’s what I thought until I really looked back in time.

In January I started to scan all the photos I had from my life, Gregg’s life and his family and all of my Mom’s photos. It took me 6 months to scan just over 7000 photos and negatives. Since then I have only burned them to DVD. I had planned to edit them all, but I was so burnt out from all the scanning I left them alone. I guess they will get done next year.

In August I reconnected with an old friend. I never thought that I would ever see her again. We now talk and keep in touch on Facebook. I think that if we lived in the same town we would end up seeing each other every day like we use to.

Those are the hi-lights of my year. Not much else happened. I spent a lot of time sick this year. September was the worst. The pain my back had gotten to a point that I couldn’t even stand straight. I finally agreed to see a Chiropractor, (again). Over the years I have seen many and none have helped. Well, it’s been 4 months of going once a week and I can tell you that I am feeling 80% better! He knows of my neck injury and has worked around it, but now he is actually working on it. He wants to help me so that I am not so dizzy every day. There is no twisting on the neck or body. He only hits pressure points using a small tool(activator). I will keep seeing him. What ever he has been doing, is helping me.

So, what will the new year bring?

End of August we will be seeing Cirque De Soleil “Quidam”. I got tickets from Gregg for Christmas! 3 tickets. We are taking Mom with us. Very excited!

It will be our 10th anniversary in September. We are planning and hope that it will happen that we can go back to Playa Del Carmen. We try to go ever 5th year. It’s also my 45th birthday in October. So we want to be there for the end of October so I can have a drink on the beach for my birthday and we can celebrate Halloween and Day of the Dead.

Other than that, I really don’t think there is anything else so far. I do plan on getting in better shape now that my back is getting better. I guess I will just have to see how things go. Take each day as it comes. I won’t make any new years resolutions, it’s just a bit silly to make empty promises that you know you won’t be able to keep. I do want to try to blog more, but I’m not making any promise that I will do it! LOL

What am I Doing? Arrachera

Well I am cleaning. Doing the laundry and then do my workout and after that I will have a shower. Gregg went out yesterday to the local butcher up the road and ordered some skirt steaks that I have to pick up tomorrow. I am planning on making a Mexican meal for Valentine’s Day. Your probably wondering what I plan to make. Well let me tell you.

When we were in Mexico, we noticed a steak that was served almost at every restaurant. Its called “Arrachera” which means flank or skirt steak. Its actually a simple meal. I think its all about the spices and how long it marinates. Anyways, we really enjoyed it. So now I am going to make it for us. We drove into Vancouver on Saturday and stopped by a Mexican grocery store and found the spice we need.

The recipe is very easy, all you do is marinate the meat in the spices for 1 day. Then grill and serve.

Season both sides of meat with GOYA seasoning and lime juice. Cover entire meat with lime and season lightly.
Once the meat is limed up and seasoned you roll it up, like a sushi roll, nice and tight and place all of the meat all rolled up in rolls in a deep dish and pour beer on top making sure it gets all over. If you marinate your meat with beer and you don’t roll it up, you wash off all of your seasonings.
Cover the meat with plastic wrap and leave it in the fridge over night, but 2-3 hours works just as well.
Then just grill each side for like 5-6 min less if you like it medium. The meat will be tender, juicy and full of flavor. Enjoy

I’m really curious if this will taste the same. I hope so! I have been wanting it for a while now. Here is a picture of what we had in Mexico at H&C restaurant/butcher. You get the steak, a baked potato, half an avocado and lime and a hot green pepper. Gregg and Glen both gave me their avocados.

The only problem with this, is that I can’t get Leon Beer here. It doesn’t get exported out of the Yucatan. So Gregg will have to have something else. A cold glass of diet coke with a twist of lime on ice sounds good.

Halloween Memories

Last year Gregg and I and his dad Glen spent our Halloween in Playa del Carmen, Mexico. We had such a great time. We met so many fantastic people. So I am sharing so pictures from the parties that night. I wish we were all there again. It was the best!

October – Mexico

Can you believe it? Its already October. Wow! This year has flown by. Soon it will be Christmas and then a new year. October is one of my favorite months. Yes its my birthday on the 27th, but its more than that. I have always loved October. Even when I was a kid. I love the fall weather. The leaves turning colors and falling to gather around the trees. The crisp air in the early morning as the sun peaks out thru the fog. Yup its a beautiful time.

Its also a reminder that its been a year since our last trip to Playa Del Carmen, Mexico. It doesn’t seem like its been a year. I so wish we could go back again. I miss the beach. The sound of the water as it hits the sand in the evening. Or walking along 5th Ave and finding a cafe to sit and have a drink while we people watch. I miss all the friends we made. I really enjoyed stopping by La Ranita everyday for our afternoon beer. There was always someone there to sit and chat with.

We will miss the Halloween party, but we will be watching all the local webcams. That was the best party I have ever been to. We all had so much fun. Glen’s black eye went well with his pirate costume…lol. All I had to do was add the line around his eye so he had a patch.

I hope that we will be back there for the next party in 2009. It could happen.
