Wheat-Free

Monday Prep

I decided to do some food prep. I want to see if this makes it easier for meal times and to lose weight. Everything is low carb and grain free.I made egg muffins for Breakfast. Some lunches for Gregg to take to work. Rice, with veggies and some meats. Trying mason jar salads. Plus some extra meats for whatever.

 


I had planned to just make some spicy beef to add to other recipes, but as I went along things sort of ended up in the pot. Now its beef, veggies, coconut tomato soup.

 

Also used up some hot dog wieners and made fathead sausage rolls.

 

In the end, it was like nothing ever happened in the kitchen.

 

 

Vegan Christmas!

Alright, I want to clear this up. I don’t eat wheat. Actually I try to stay away from all grains. This has nothing to do with gluten-free. I will eat gluten. I just don’t eat grains. I have been tested by a real allergists (not by a friend of a friend that thinks I should eat gluten-free because my tummy hurt from eating too many christmas cookies) and the results said that I am allergic to wheat. All types of wheat as I have discovered over the last few years.

There is a big difference between wheat free and gluten-free. Any type of “wheat” causes pain for me. What type of pain?.Well think of being doubled over with breath taking pain that makes you scared to take a breath. The pain of gas building up and trying to move its way through your intestines. Getting all sweaty and dizzy. Wishing you could die instead of having to go through it.Yeah I think you get what I am saying. Then top it off with Montezuma’s revenge. Nice way to spend the day. But wait! There’s more! You get another day of dull tender aches in the intestinal areas of your body. Yes it’s just so much fun! Not.,

I instead use nut flours. I can’t eat the “gluten-free bake mixes” There are grains in them. Spelt, millet, sprouted wheat, ancient grains. Doesnt matter, they all hurt. I can’t even do bean flours, which you do find in many of the gluten-free mixes. I also don’t eat rice flour or potato. I could, but it’s my choice to leave them out since I eat Low Carb.

What does this all have to do with a Vegan Christmas? My oldest boy Matt, and his wife are now vegans. Have been for over a year. Why they decided on this, I’m not really sure. Any ways, I am having over for dinner on Christmas Eve. I had to find something they would eat. Well let me tell you, it wasnt easy to find food they could eat. Sure it sounds simple but it’s not. I searched across the vast land of Google to find something tasty to make for them but also something we could eat. Simple, veggies! LOL, not really!

A vegan doesn’t eat any type of animal product. Not able to use any dairy, eggs, and such really made it a challenge for me. Since we eat a lot of butter, cream, cheeses cause of our low carb diet. Which includes meat. After many texts messages with Matt I have finally figured out what to make for dinner. I just hope it will be tasty. Definitely not the traditional Christmas dinner!

So now I am curious what is the difference between vegan and vegetarian?   I will need to travel across the land of Google to find my answers.

Low Carb Eating

Well, today Gregg and I are starting a low carb eating plan. I dont really want to say diet since this will not be just for weight loss.I realize that I cant eat most wheat based foods and eating low carb will become more of a live style for me. So I am taking Gregg along with me for the ride…lol. There will be some major changes to the way we eat. Especially at family functions. No more baked goodies. No breads, some fruit but mostly just berries. Low carb is more about vegies and meat.

We tried the Atkins diet many years ago and it did work, but this time I am going to go more of atkins/south beach style. I am doomed to fail is I have only 20 carbs a day. This week it will still be a bit higher since there are some foods that need to be eaten first. There is no way I am throwing out food.

Eating low carb will also make me feel better by leaving out my allergy foods. Which is mainly starches and grains. No wheat, corn, potatoes or rice. As for fruit, well I already know that apples, bananas and oranges dont agree with me. I do have a weakness for summer fruits like watermelon and berries, but I can eat those on CL since they are lower in carbs. I dont have a problem eating my greens, I love vegies. Meat, easy, love meat too.

I’m sure Gregg and I will adjust to this way of eating over the next few weeks. I know my starting weight isnt that high, but Gregg has gained some back again. Not sure how much and if he would want me to post it here. I have kept most of my weight off that I lost a few years ago. Tho I had started out at 175lbs I am now at 152. I want to be around 135 if I can, but 140 is fine too. It would be great to see Gregg at 200lbs, but I think it will take some time to get him there.

With the nice weather starting, we will be going for walks in the evenings and I have many Wii games for us to play. Latest addition is Zumba and Just Dance 2. I plan to try them out this afternoon. As long as my back is feeling up for it.

I will try to do a weekly update. Maybe even start a new page to post LC recipes and post our weekly weigh in. Might help keep us on track better.

Wheat Free

Since Christmas I have been eating wheat free. Why? Well, I am allergic to wheat..duh!  I have known this for a few years now, but I have been doing ok with small amounts. My allergist told me that when my allergy flares up all I need to do is avoid that item for 3 months. After that I can add it back into my diet.

The first time I did it, I could eat wheat for about a year after that. Now it flared up in August, but I didnt really thing about it being an allergy. I should have gone through my “bad” list. Instead I went to the doctor and he gave me Zantac for the itchy rash I had developed(remember how itchy I was). The pills helped with the itchiness. Just before Christmas I realized I couldnt eat anything with wheat in it. I would get such a bad tummy ache and I would feel awful all over. My body was ill and trying to reject the wheat.

It’s been almost a month with no wheat and I feel so much better. I stopped taking the Zantac about 8 days ago and no itchiness! So I thought I would have popcorn on Thursday evening. Big mistake. Corn is also on my bad list. Seems I cant have popcorn. My tummy got upset and by morning my IC had flared up. Looks like I will be leaving corn off my diet for 3 months.

Anyways, yesterday we went to Vancouver. Gregg had a dentist appointment. After that we went to Choices food store just off 16th ave. It just so happens that Gregg found out that they have a Rice Bakery. Since he didnt bring the address with him we ended up at Choices only. We needed to drive one more block down the road. Oh well. Choices had stuff too.

I got some Rice bread and rice butter tarts,poppy seed lemon cake and a carrot muffin. I nommed the muffin this morning and it was good! I bought some rice flour, but when I got home I thought about it and figured out that I can make my own rice flour. I have mom’s grain  mill. I’m going to try it out later today.
