South Beach Eating Plan

Gregg and I have started doing the South Beach diet. Well, I don’t call it a diet, It’s just another way of eating. I took the time a really read the book, not just skim through it and “think” that I know how to do it.

I’m learning what are good carbs, bad carbs, good fats and bad fats. It’s all quite different from the Atkins‘s diet that we did a few years ago. I like that it’s not as low carb as other diets.

We are just starting and I thought I would post the recipes that I am going to be trying out. Most of the recipes are just from web or from my cook books. I’ll add pics when I remember to take them. Last night I made Garlic Chicken. It was pretty good. Very simple and I could have added more salt and pepper. I doubled the recipe so that I had enough leftovers to make 2 lunches for Gregg.

I also made a simple leafy salad with a low carb dressing. Peeled and diced sweet potato that I tossed with olive oil, salt and pepper and then baked it alone side the chicken.

Easy Garlic Chicken Breasts

1/4 cup lime juice 
1/4 cup olive oil 
1 Tbsp. minced garlic 
2 boneless, skinless chicken breasts 
salt and pepper 

In a medium bowl, whisk together the lime juice and olive oil. Add garlic and season with salt and pepper generously, and add chicken, making sure it is well-coated with the marinade. Marinate chicken, covered in fridge for at least 3 hours and preferably overnight. 

Preheat oven to 400 degrees F. Remove chicken from marinade and discard marinade. Arrange chicken breasts in a shallow baking pan. 

Season with salt and pepper and roast for 25-30 minutes or until chicken is cooked through and the juices run clear when you prick it with a fork. Serves 2. 

**This is really simple, but surprisingly good. The chicken is somewhat garlicky and tangy because of the lime juice, but it is not too strong-tasting.

Today’s Stuff

As you can see by the way my blog has changed I am working on a new theme. It might be a few days before I find exactly what I am looking for. Please leave me comments if you like any of them.

As for me, well I am in pain once again. I have an appointment this afternoon with my Doctor. Hopefully he will be able to help me. I need him to refer me to a new Urologist since mine retired last week. Hope he knows of a younger one in town.

My IC has gotten to a point where I can’t control it anymore. I have gone back on my IC diet and eliminated some foods in hopes that it will help. Basically I’m low carbing it. Veggies and meat is about all I can eat. Anything acidic and I run screaming from the table.

Well I am off to see the Doc now. I’ll update more when I hear what he has to tell.

Crap! Stupid IC!

Ever since my IC flared up 3 weeks ago I can’t seem to get control of it. It went away for a couple days but then it was back and its been off and on. I feel ok when I get out of bed but by mid afternoon it seems to start up. I honestly don’t know what it is that is making me hurt?

I’m careful with my food and drinks. I’m not using any makeup or lotions. The only thing I can think of that I have changed is my body wash. I switched to Dove instead of Ivory cause it was on sale. Maybe that is what the problem is? I’ll put it aside for a few days and see if that helps.

This is so frustrating! I can’t do my yoga or do anything that will cause my back to get sore. As soon as my back hurts, my IC gets bad. All I can do right now is lay around. Even sitting in this chair for too long will make my body scream. I really wish there was a cure for IC. I hate it!

OK…let’s relax…calm down. Stress is the killer. No stress. I’m going to get over this. I’m lucky, my pain can be controlled. I just need to figure out what is causing it. So it’s either the Dove body wash or ? Or what? Food? Hmmm…

I think it’s time to go back on my allergy diet. It made a big difference the last time I did it. I had gone 6 months with no pain. I guess I’ll start it again. Not easy to do, but worth it.

Finally!

I finally talked to Colby. He has just been too busy to call. When I asked what he was doing, he said “not much”. LOL, ok so he hasn’t been too busy. He just never remembers to call me. Typical for a growing Boy. He wants to come down for a visit, but doesn’t want to miss out any work. He will try to come down for a weekend next month and I told him he has to come down for his Oma’s 75th Birthday in May.

What else? Oh, as you know Gregg and I went to Matt & Bree’s for dinner on Sunday. We had a very nice time. dinner was good and I brought over some leftover Christmas baking that I had in the freezer for dessert. Their place may be small, but they have it organized well. I guess its our turn to have them here for dinner soon.

As for me, I have spent all yesterday afternoon and still now in a bad IC flare-up. I had a a rough night with all the pain. Even been doubling my meds. I’m not sure why it has started up. I think it might be either the ice tea I have been drinking too much of, or the new lotion I have been using, or just the stress of wondering where and what Colby was doing. Well I don’t have to worry about Colby, he is fine.  I’m not drinking any more iced tea and the lotion was returned to the store yesterday. Now I just wait for the flare-up to stop. This could take hours or weeks.

On a happier note…. I have lost a total of 5lbs this month. Gregg has lost 8lbs. Slowly going down for both of us. 🙂

Slow Pace

This week is a bit slow. I’ve been home doing my workouts and house work and crap like that. So nothing new. Making sure Gregg and I stick to our diet plan. I’m slowly losing weight and Gregg is too. It’s better to take it off slowly anyways. Too fast and it will just come back twice as much. I have noticed a difference in my waist since I started doing yoga. Its getting a bit tighter. Which makes me happy. I really like my Wii Fit. It’s really easy to use and I like that it keeps track for me. I think Mom should get one. I bet she would love it.

What else? Survivor started last week and so did Amazing Race. Both are shows that Gregg and I watch together. We like to pick apart the shows and say that we could do better…lol. I have other shows I watch while Gregg does his homework. Lost is back on too so I’ve been watching it. Waiting for Prison Break to start in April.

I did hear a rumor… Dippy might be moving soon. I can only hope and pray that it really is true and will happen before summer is here. Supposedly, he has been approved for a mortgage and is looking for a place in Chilliwack. If this is true, I hope that they sell the condo to some nice older people with no kids.

Oh,  Matthew and Bree have moved into their new condo and they have invited us for dinner this Sunday. This will be a first. I’ve offered to bring dessert, just have to figure out what to make. I’m looking at low calorie recipes today.

Well, that’s whats happening around here.

Dieting Again

Gregg and I are back on the low carb diet. I need a break from all the carby foods we have been eating. I haven’t really gained any weight only about 3lbs. Which is fine, I just worry that Gregg might gain too much and he tries so hard not to indulge.

So that’s it! We are low carbing it until Christmas. Not too low. About 20-50 carbs a day. I don’t want us to starve! We will be following the south beach plan, more or less. Low carbing is actually very easy. No rules really. All you need to do is cut out all the “white” foods.

Stop eating white flour. So, no more white breads, no crackers and no more baked goodies. Cut back on fruit and have berries. Eat lots of veggies, but not the starchy ones like potatoes and corn. Rice is ok as long as its brown. No milk, which I don’t drink any ways.You can eat as much meat as you want, but I try to stay with normal portions. Cheese is good too. And you can have real butter and cream.

That’s about it. Pretty simple. Just need to read labels and make sure the carb count is low and if the fiber is high that is great. You can subtract the fiber from the carb count.

The best part I like about low carb, my tummy feels better. Not so bloated anymore. I guess we’ll see if it works. Last time we didn’t stick to it cause there was too much going on. I hope we can this time.

I have been a member of a site called “3 Fat Chicks” for a few years now. Back when Gregg and I first started the “L.A. Weight loss” program. Well, Gregg was on it and I followed him. Paying for 2 people was just silly. As we started the diet we looked for online help also. 3 Fat Chicks was one of the first sites I landed on.

I have joined many others, but never found everything I needed. 3 Fat Chicks has it all. No matter what diet you are trying or maybe you are just looking for some healthy recipes, this is a great place to start. You might even find a friend or two.

Go take a look! Look in the forums to find what you need. The main home page has a lot of drop down lists to search through. I think you will all find something to help you in some way.

Paul McKenna On TLC

Sunday evening I noticed a show on TLC. I missed the first 20 minutes, but I sat and watched the rest of the show. It was called “I can make you thin“. Yes, I was a bit skeptical since there are so many people out there trying to get rich quick off of all the fat people out there in the world. I listened and I watched and it reminded me of a info-commercial.

I have to say that everything the man was saying made sense. Why? well, its everything we have always known. The man “Paul McKenna”  is just telling us what we already know. EAT SLOWER. ENJOY YOUR FOOD. This show will be on sunday evening for a few weeks as he shows us his secrets on how to get thin. This week he told the world 4 simple rules.

  1. When you are hungry, eat.
  2. Eat what you want, not what you think you should.
  3. Eat consciously and enjoy every mouthful.
  4. When you think you are full, STOP eating.

I have know this all my life. Mom always told us to “slow down, there’s no fire”. We got whatever mom cooked and we ate it, we enjoyed each mouthful. We stopped when our tummy’s had no more room. So yes, we have know these simple rules since we were kids. Only one problem, as we got older, we forgot. Life became busy with friends and school. Then marriage and kids, jobs and everything else in between.

Now Paul has come along and taken Mom`s rules and made them his own. Ok, maybe we need Paul to remind us of them. I am going to try and remember them at each meal and see if it does make a difference on my weight. I have told Gregg that we will be testing these theories. We started with last nights dinner. We took out time and enjoyed our meal at the table with no TV. It was nice.

I will keep you updated on our progress over the weeks to comes.If it works, GREAT! If not, oh well. This should be interesting…hehehe
